Lemongrass Mint Soda Recipe

On Wednesday I met the "other" Jenna (Let's Go Sunning) at Straits Restaurant in Santana Row. We both tried a lemongrass soda, and it was sooo delicious and summery! Of course I had to learn how to make it, since a girly weekend is on the way. Not exactly sure of everything they had in it, though. I took direction from Stefano Faita's recipe, tweaked it a little bit and this turned out yummy!

How to:

Wash the lemongrass stalks (and take off the outer, gritty pieces). Cut off the nether half of the stalks, and save the top parts for later. Bruise the bottom parts (I used a muddler for that), and chop into small pieces.

Heat the stalk pieces together with water and raw sugar until the mixture starts to boil, take off stove and let cool. Put in refrigerator overnight.

Pour the mixture into a carafe through a sieve to catch all the bits n pieces. Add the lime juice and sparkling water in the mix.

Fill glasses with bruised mint leaves (4 per glass, again, used the muddler), lemon slices (2), some ice and the pieces of lemongrass stalks you had left (can be split into two). Pour the soda-mix into the glasses.

Enjoy!
